2 cups vodka
1/3 cup prepared instant lemonade
1 (8 ounce) envelope lemon flavored Jell-O mix
1 teaspoon vanilla extract
3/4 cup flaked coconut
1 cup cooked orange zucchini
4 eggs
1 (3 ounce) package cream cheese, softened
4 cups fruit
1 1/2 teaspoons rum flavoring
1 cup finely chopped almonds
1/4 cup mashed dried cherries
1 (20 ounce) can frozen orange juice concentrate, thawed
Stir together vodka, lemonade, lemon flavored gelatin, vanilla extract, coconut, fruit and coconut in medium bowl. Mix with an electric mixer; stir in pineapple, orange zucchini, eggs, churning until blended. Cover and chill in refrigerator. Discard remaining lemon juice. Freeze or refrigerate to cover.
Pour orange mixture over frozen pie layers.
Cool completely. Discard remaining lemon juice, and reserve from freezer. Combine orange mixture and orange juice in medium bowl. Mix thoroughly, then refrigerate to chill while preparing layers. Refrigerate immediately. Serve chilled.
