Spiced Sweet Potato Casserole Recipe

Ingredients

1 (10 ounce) package frozen sweet potatoes, thawed

1 medium sweet potato, sliced

1 cup boiling water

1/2 cup margarine, melted

1/2 cup minced onion

2 green onions, sliced

2 bay leaves

1 dash lemon zest

3 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon cinnamon

1 teaspoon ground nutmeg

1 teaspoon ground allspice

Directions

Put the sweet potatoes in a large bowl of ice water. Cover with plastic wrap and place in freezer until thawed. In a medium bowl, combine boiling water, margarine, onion, green onions, bay leaves, lemon zest and flour. Stir until smooth.

Spread mixture into a large bowl, and mix with frozen sweet potatoes. Place horseradish in small portions of dough.

Rolling the dough out into 2 inch rounds, place the round on a medium baking sheet. Brush with egg wash and sprinkle with lemon zest and sugar. Arrange on baking sheet and roll up.

Bake in preheated oven for 75 minutes. Turn off oven and let unit sit in oven for an additional 50 minutes, until they are light golden brown.
