3 cups peeled, cored and sliced sweet potatoes
1 1/4 cups packed light brown sugar
1 egg, beaten
1 1/2 teaspoons vanilla extract
2 teaspoons lemon juice
1/2 teaspoon grated lemon zest
1 cup chopped fresh spinach
3/4 cup chopped onion
4 cups shredded Mozzarella cheese
Preheat oven to 400 degrees F (200 degrees C). Grease and flour 3 6 4 inch round baking dishes.
Place sweet potatoes in a large bowl and add brown sugar, olive oil, lemon juice, lemon zest, spinach, onion, Mozzarella, Parmesan cheese and lemon juice. Mix gently and arrange in prepared pans.
Bake in preheated oven for 45 minutes.
