Egg Pie III Recipe

Ingredients

4 eggs

1/2 teaspoon vanilla extract

1/8 teaspoon lemon zest

4 tablespoons butter, melted

3 tablespoons French sugar

1 (11 ounce) package white cake mix

1 pint heavy whipping cream

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

In a large bowl, beat eggs, vanilla extract, lemon zest, butter and sugar until blended. Stir in the flour mixture, baking soda and yeast.

Add the cake mix and stir well.

Using spoon set apart, press egg mixture on most of the batter; if hot, continue beating until no streaks remain. Pour batter onto prepared pan.

Bake at 350 degrees F (175 degrees C) for about 50 minutes in the preheated oven, or until a toothpick inserted into the center of the pie comes out clean. Chill in refrigerator before serving. Return pie to cool, place metal spatula on top of pie, using a fork to help maintain the shape. Microwave orange slices in microwave for 2 to 3 seconds to make them stick together. Cut slices in half to make a triangle. Line a 9 inch roasting pan with greased parchment and bake at 350 degrees F (175 degrees C) 12 to 24 hours or until just cooked through. Cool completely and fill with whipped cream.
