Roasted Vegetable Wraps Recipe

Ingredients

1 (10 ounce) can crushed pineapple, drained

1/2 cup chopped onion

1 (16 ounce) can sliced mushrooms

1/3 cup olive oil

1 tablespoon ground black pepper

1/2 teaspoon dried oregano

3/4 teaspoon salt

1 tablespoon dried basil

Directions

Place pineapple, onion, mushrooms and olive oil in a medium bowl. Stir in pepper, oregano, salt and basil. Cover and refrigerate as needed.

Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with non-stick spray.

Spread the pineapple and onion mixture evenly in the baking dish. Brush the bottom with the pineapple mixture and sprinkle the mushrooms over top.

Bake for 30 minutes in the preheated oven, uncovered. Remove from oven and sprinkle with the tomato paste before broiling.
