Poached Salmon II Recipe

Ingredients

3 tablespoons olive oil

1 pound salmon fillets

4 tablespoons Italian-style seasoning

1 lemon, juiced

1 cup dry white wine

1/2 teaspoon white sugar

2 cups white wine

2 fluid ounces dry sherry

2 tablespoons lemon juice

Directions

Preheat oven to 375 degrees F (190 degrees C). Place an electric broiler pan or grill in the center of the oven and place oil in a shallow dish.

In a large bowl, toss marinated fillets with Italian-style seasoning. Pour lemon juice over marinade.

Preheat oven to 350 degrees F (175 degrees C).

Place salmon fillets on foil and pat dry. Spread foil the bottom of a 9 inch glass baking dish. Sprinkle is breadcrumbs over salmon.

Bake salmon fillets in preheated oven for 10 minutes. Stream salt and pepper mixture further down side of salmon. Top fillets with breadcrumbs and lemon juice shake.
