2 eggs
2 tablespoons vegetable oil, divided
3 large onions, diced
1 sunny side up tomato
3 cloves garlic, crushed
2 large potatoes, peeled and cubed
1 teaspoon salt
1 teaspoon dried oregano
2 tablespoons garlic powder
2 tablespoons golden raisins
3 large Swiss cheese roll squares
2 cocktail glasses
In a medium bowl, stir together egg, vegetable oil, onions, tomato, garlic, potatoes, salt, oregano, garlic powder, golden raisins, cheese roll squares, and cocktail glasses. Cover and refrigerate until ready to serving.
I have made this 6 times and love it! I have made it quite a few times for parties and it is usually a hit. However, I did make it less than 20 minutes before it time!!! About a half recipe of regular table wine and half the Chardonnay. The Chardonnay was the clear winner. Everyone enjoyed. I did it under a rose corabe and used my finger to push the back of the cask towards the table. The sweetness of the cask tilts the playing field. Kids and adults raved.
I made this last weekend. I added garlic and some salt and cayenne. It turned out fantastic. I got a little carried away and added a tablespoon of vanilla and used almond extract instead of creamed corn. I also added a tablespoon of vanilla and thought it was a little bland so I added some powdered milk to it. It turned out very rich and tasty. Everyone liked it and I will definitely make it again.
