1 cup white sugar
1 cup vegetable oil
1 cup milk
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 cup butter, softened
1 1/2 cups white sugar
3 cups cornflakes cereal
1/4 cup butter
1 teaspoon vanilla extract
1 teaspoon lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch springform pan or a 10 inch bundt pan.
Sift together the flour, baking powder, cinnamon and salt and set aside. Make the sugar and oil mixture by beating egg in large bowl until frothy. Stir in the milk and milk mixture, stirring just until incorporated. Make the flour mixture by beating egg into the milk mixture in the order recommended by the manufacturer. Fold in the flour mixture until completely combined. Spread mixture into the prepared pan.
Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of the cake comes out clean. While the cake is baking, spread lemon zest over the top of the cake while it's still warm. Cool completely before cutting into squares.
