1 apple - peeled, cored and sliced
1/4 cup water
1 cup white sugar
1 cup butter
2 tablespoons milk
1 egg, beaten
1 teaspoon vanilla extract
3 tablespoons margarine, softened
3 tablespoons all-purpose flour
2 teaspoons vanilla extract
In a large saucepan, bring 1/2 cup sugar to a boil and cook until fluid is removed. Remove from heat and gradually pour in water and sugar. Pop lid back onto stovetop over a burner until bubbles are large and steam releases within 5 minute increments. Remove from heat.
Stir butter, milk, egg and vanilla into remaining sugar. Blend and pour over apricots. Chill at least 3 hours.
