1/4 cup butter flavored shortening
1/2 cup white sugar
1/4 cup water
6 tablespoons corn syrup
4 cups mashed potatoes
3 carrots, cut into 1 inch slices
1 (3 ounce) package green or red cheese flavored jelly
1 (8 ounce) can sliced water chestnuts
In a small saucepan, melt butter and sugar over medium heat. Whisk in water. Bring to a boil over medium heat, stirring frequently. Bring to a boil, stirring gently, and continue to heat, stirring, until mixture is thickened and thick; stirring frequently, about 7 minutes. Remove from heat and stir in corn syrup. Pour into two separate bowls. Chill in refrigerator until serving.
Beat the eggs. Beat the milk into the corn syrup mixture. Stir in the mashed potatoes, carrots and green cheese jelly. Transfer into the warm meringue.
