Sour Cream Cakes Recipe

Ingredients

1 cup butter, softened

1/2 cup white sugar

2 eggs

1/2 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup crushed buttery round crackers

1/2 cup honey and water

1/2 cup packed brown sugar

Directions

Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking pan or casserole dish.

In a large bowl, cream together the butter or margarine and sugar until light and fluffy. Beat in the eggs one at a time. Stir in the vanilla. Combine the flour, baking soda and salt; stir into the creamed mixture until just combined. Roll the dough into 1 inch balls. Spread the cracker crumbs evenly into the prepared pan. Corpse them, then flatten slightly using a wooden pick. Sprinkle lightly with the honey and water.

Bake for 15 to 20 minutes in the preheated oven, until lightly browned and a knife inserted comes out clean. Cool before serving warm or allowing to sit out in the cold for a few minutes before serving with any more cracker crumbs.

The recipes and the photos don't do justice to the flavors involved. Bite sized treats are soooo sweet and unless you are a pedantic child you will find this dish insecure. I made a KBicum recipe that used either almond extract or a combination of almond and candied pecans. It came out very moist and had some nice, even frosting touches. I served this with turkey breakfast sausage and it was definitely delicious.
