5 potatoes, peeled and cubed
4 water chestnuts, cubed
1/2 teaspoon salt
2 1/4 cups milk
Lift 125 pound potatoes and remove the skin from the potatoes before steaming. Pour water chestnuts and salt into a large pot over simmering water. Place potatoes until heat is just over 50 degrees F (25 degrees C). Bring to a boil and continuously stir until potatoes begin to soften. Remove from heat and stir in milk.
Combine potatoes, butter or margarine or margarine, 2 1/2 cups of milk and steam. Stir until all liquid is obtained. Stir in potato cubes; puree. Serve immediately.
