1 cup butter, melted
1 cup quick-cooking oats
1 cup all-purpose flour
1 1/2 teaspoons salt
1 cup unsalted butter, softened
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 cup rolled oats
1 cup semisweet chocolate chips
Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
In a medium saucepan bring 1 cup of butter or margarine to a boil, and stir in oatmeal and flour. Cook, stirring frequently, until smooth. Remove from heat, stir in salt, 1 teaspoon at a time, until smooth. Spread into prepared cookie sheets. bake for 12 to 15 minutes. Allow to cool on wire racks.
Meanwhile, preheat oven to 375 degrees F (190 degrees C) and stir-fry chocolate chips until golden brown. Remove from heat and pour into baking pan.
Cool on wire racks.
