1/2 cup heavy cream
1/2 cup chopped onion
2 eggs
1 (8 ounce) package frozen chopped spinach
1 (8 ounce) package shredded Monterey Jack cheese
Place the cream in a bowl, and beat with a fork until stiff. Remove from freezer, and refrigerate.
Arrange the sliced onion in a food processor or blender. Rotate the spinach into a sandwich shape. Cover, and refrigerate. Wrap the cheese vertically in foil; press into the bottoms of the square shaped wrap. Wrap the wrap around the sliced onion as well, but do not tie. Serve warm.
