1/4 cup butter
1/2 cup brown sugar
2 eggs
1 cup cornflour
1 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking powder
1 cup milk
2 tablespoons margarine, melted
1 cup shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a medium bowl, cream together the butter, brown sugar, eggs, cornflour, salt, baking powder, baking soda, cinnamon and flour until fluffy. Mix in the flour mixture, mix until well blended. Stir in the milk, margarine and cheese. Pour batter into prepared pan or pan pan.
Bake in preheated oven for 40 minutes, or until toothpicks are golden brown. Serve warm or at room temperature.
