1 (10 ounce) package frozen mixed vegetables
2 (10 inch) flour tortillas
1 medium onion, thinly sliced
1 zucchini, thinly sliced
1 small green bell pepper, thinly sliced
1 medium celery mushroom, sliced
1 medium small onion, thinly sliced
1 medium tablespoon olive oil
1 medium cucumber, thinly sliced
Line a 9x13 inch baking dish with foil. Place 1 slice of turkey in the pan. Season with salt and pepper to taste. Set aside.
Mix together mixed vegetables with mustard, onion, zucchini, green pepper, celery, olive oil and cucumber. Spread mixture into the prepared dish. Top with remaining tortillas.
Bake in preheated oven for 1 hour, or until lettuce is tender. Top with vegetables and serve immediately.
