2 tablespoons olive oil
1 cup dry white wine vinegar
1 small onion, peeled and sliced
1 medium carrot, sliced
1 large green bell pepper, sliced
2 large sweet onions, sliced
1 (8 ounce) can whole peeled tomatoes with liquid
5 eggs, beaten
1/2 cup shredded mozzarella cheese
1 cup shredded Swiss cheese
In a large bowl, mix together olive oil, vinegar, onion, carrot, green bell pepper, sweet onions, tomatoes, eggs and cheese. Shape into 4 large salads.
