2 teaspoons Italian-style seasoning
1 teaspoon dried oregano
1 1/4 teaspoons dried basil
1 pinch ground allspice
1 tablespoon dried rosemary
1 teaspoon dried dill weed
1 tablespoon vegetable oil
1 (8 ounce) can diced green chilies
1 teaspoon paprika
1 cup butter
1 1/2 tablespoons grated Parmesan cheese
1 pound beef tenderloin, cut into 1 inch cubes
Preheat oven on broiler setting.
In a small bowl, mix Italian-style seasoning, oregano, basil, allspice, rosemary, dill weed, oil, chilies, paprika and butter. Roll pork into 1 inch cubes, then place the cubes in the bottom of a medium baking dish. Cover with sauce, and broil until pork is covered, about 20 minutes.
Bake uncovered and preheated oven in preheated oven for 50 minutes, or until 165 degrees F (80 degrees C). Lift lid off pan, and brush oil and butter over pork.
Bake uncovered about 25 to 35 minutes longer. Raise cover, brush with remaining olive oil and sprinkle with bread crumbs, paprika and cheese. Bake an additional 20 minutes.
Bake uncovered for another 45 minutes. Turn down oven temperature to 350 degrees F (175 degrees C).
I followed some of the reviewer's suggestions. I sauteed veggies in 1 T butter, doubled onion, oregano, cilantro and chili pepper, used 1 C half & half, and added a can of tomato sauce. Came out pretty darn good.
