Organic Spinach Vicki Recipe

Ingredients

3 cloves garlic, minced

3 tablespoons olive oil

1 onion, chopped

2 medium red bell peppers, chopped

1 1/2 ounces cream cheese, softened

1 package (12) pre-cooked mushrooms, softened

1 (4 ounce) can vanilla frozen yogurt concentrate

1 teaspoon lemon zest or to taste

Directions

Heat oil in large skillet over medium heat, add onion, and saute for minutes; then stir in garlic and saute for 10 minutes; then add olive oil, bell peppers, cream cheese and mushrooms.

In a large bowl, mix yogurt, lemon zest and lemon juice. Mix well and spread mixture over meat mixture; cover. Bring the mixture to a rolling boil. Add lemon zest and allow to simmer, stirring occasionally until zest is obtained.

Reduce heat to low and simmer 15 minutes. Add 5 to 7 slices of bacon or sausage and cook until bacon is crisp.

I changed the proportions on the peppers and cubed the onion into 1 Tblsp of fresh rosemary (didn't have any garlic powder). Gave it the lean, not dry taste. But didn't add any salt. Just thought it might help.
