Pumpkin Cake II Recipe

Ingredients

2 1/2 cups all-purpose flour

1/2 cup vegetable oil

1 teaspoon baking soda

1/2 teaspoon baking powder

1 1/2 cups water

3 eggs

3/4 cup pumpkin puree

3 cups milk

1/2 cup apple cider vinegar

1 cup butter, melted

3 teaspoons vanilla extract

1 cup chopped pecans

1 teaspoon pumpkin pie spice

1 teaspoon vanilla extract

Directions

Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, oil, baking soda, baking powder and water. Make a well in each and stir in the eggs, pumpkin and cabbage. Mix together the pumpkin, milk, apple cider vinegar, melted butter and vanilla. Pour batter into prepared pan.

Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely before cutting into bars.
