2 eggs
1 tablespoon vegetable oil
1 cup white sugar
1 cup applesauce
1 teaspoon vanilla extract
1 teaspoon lemon juice
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 teaspoon orange juice
1/2 cup applesauce for dusting
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) jelly jars or cake pans.
In a large bowl, beat the eggs and oil until frothy. Stir in sugar, sugar, applesauce, vanilla extract, lemon juice and flour. Beat well. Stir in baking powder, baking soda and cinnamon. Fold in chopped applesauce. Pour batter into prepared jars.
Bake in preheated oven for 45 minutes, or until a toothpick inserted into center of a cake comes out clean. Allow to cool completely. Dust with powdered sugar and glaze with orange juice.
