3/4 cup packed brown sugar
3/4 cup butter, softened
3/4 cup packed brown sugar
1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup rolled oats
3 egg whites
1/2 cup raisins
1 teaspoon vanilla extract
3/4 cup chopped pecans
Preheat oven to 325 degrees F (165 degrees C). Grease cookie sheets.
In a medium bowl, sift together the flour, salt and baking soda; set aside.
In a large bowl, cream together the butter, brown sugar and flour on medium speed until well blended. Beat in the eggs one at a time, then stir in the whites and raisins. Stir in the oats, one at a time, until well blended. Drop dough by heaping spoonfuls onto the prepared cookie sheets.
Bake for 12 in the preheated oven, or until a toothpick inserted into a center comes out clean.
When the cookies are ready, they will be very soft. If the cookies start to stick when you press them down, they are sticky.
