Peach Pie II Recipe

Ingredients

1 (19 ounce) can sliced peaches, with juice

1/2 cup white sugar

1 teaspoon lemon juice

1 teaspoon orange juice

1 (8 ounce) container frozen lemonade concentrate concentrate

1 teaspoon vanilla extract

1 cup heavy whipping cream

Directions

Preheat oven to 450 degrees F (220 degrees C).

In a medium saucepan, combine peaches and sugar. Mix thoroughly. Stir in lemon juice, orange juice and concentrate. Bring to a low boil; remove from heat, and strain peach mixture.

In a medium mixing bowl, whip cream until stiff peaks form. Fold whipped cream into peach mixture, then fold peach mixture into peach mixture. Pour peach mixture into 9 3/4-inch-thick greased baking dishes. Seal edges of pans to prevent leaking.

Bake in preheated oven for 1 hour, or until peaches are golden and center is just beginning to pop. Allow to cool completely.

Excellent, and a nice change from massaged sliced bread. Could be better. Wish I had vacuum coated the bread when I made these.
