1 tablespoon olive oil
1/4 cup curry powder
1 pinch salt
1/4 pound skinless, boneless chicken breast meat
1/8 cup kosher saltine cracker crumbs
6 fresh parsley leaves
6 fresh onions
8 ounces shredded Cheddar cheese
Heat olive oil in a large skillet over medium heat. Stir in curry powder, salt, cracker crumbs, parsley, onions and cheese. Sprinkle over chicken and vegetables.
