1 (1 ounce) square unsalted butter or margarine, softened
1 (15 ounce) can refried beans, divided
50 tacos, each with taco seasoning
1 tablespoon shredded Cheddar cheese
Preheat oven to 450 degrees F (220 degrees C).
Place butter in a medium saucepan and fry over medium heat until butter is melted. Drain and set aside.
In a large bowl, sift together the refried beans and taco seasoning. Stir in the cheese. Pour mixture into a 9x13 inch dish and toss to coat well.
Bake in preheated oven for 20 minutes, or until golden brown.
So easy to make!! Super simple, and this will be used many times over. The veggies were already chopped in the crock, so no extra steps, no problem with stems. I used chicken tenders, mostly black beans, though I added other veggies depending on what was on hand. Good flavor, super easy!!! It's a great ALL around recipe no matter what your preference is!
