Pasta Salad Recipe

Ingredients

1 (16 ounce) package cream cheese, softened

1/2 cup chopped onion

1/2 cup chopped fresh parsley

2 tablespoons olive oil

2 (8 ounce) cans tomato paste

1 (12 ounce) package frozen chopped spinach, thawed

1 (2 ounce) package shredded mozzarella cheese

Directions

Combine the cream cheese, onion, parsley, olive oil, tomato paste, and spinach. Mix together, then spread into a 9x13 inch baking dish.

Bake in preheated oven for 25 to 30 minutes, or until bubbly and golden brown.

I ended up using our farmers market fresh mushrooms, they were tiny but great quality and helped add some nice taste. Had leftover sauce over at the ready used at the table.
