1 cup white sugar
4 large ripe tomatoes - peeled and cut into 1 inch rounds
2 onions, thinly sliced
2 stalks celery, halved and halved
1 teaspoon orange juice
a cup vegetable oil
2 large black peppercorns
2 tablespoons rolled oats
1 teaspoon cooked cranberry juice
In a large bowl, blend sugar and tomatoes. Season with onions, celery and orange juice. Pour oil into a large plastic bag with a tight fitting lid. Shake vigorously. Add pepper, oats and cranberry juice. Shake vigorously well. Bring mixture to a boil in a small bowl. Place in bowl.
Place on 4 plates and cover with oatmeal or cornmeal. Continue to stir until well coated. Reduce heat to low and keep warm (do not boil) until serving.
