1 cup butter, softened
1 cup white sugar
1 1/2 cups packed brown sugar
1 teaspoon vanilla extract
2 eggs
1 teaspoon lemon zest
1 1/2 cups apple juice
1 (8 ounce) can evaporated milk
1 (3 ounce) package instant vanilla pudding mix
1 (8 ounce) package cream cheese
1 teaspoon lemon zest
1 (3.5 ounce) can evaporated milk
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the butter and brown sugar until smooth. Stir in the brown sugar and vanilla. Beat in the eggs, lemon zest and apple juice. Combine the lemon zest, apple juice and evaporated milk; stir into the creamed mixture until well blended. Stir in the vanilla pudding mix and cream cheese.
Spread the pie in a 9x13 inch pan. Bake for 45 minutes in the preheated oven, until lightly browned. Cool before cutting into squares.
