3 ripe tomatoes, sliced
4 purple potatoes, quartered
4 green onions, chopped
3 tablespoons unsalted butter
Preheat oven to 425 degrees F (220 degrees C). Stir in chopped tomatoes, potatoes and green onions. Pour mixture into 9-inch pot along with potatoes and green onions, and season to taste.
Cover, and bake in preheated oven 40 minutes.
