5 cubes milk
3 quarts chopped celery
1 ounce grated carrots
1 cup chopped onion
2 teaspoons vegetable oil
1 cup egg whites
1 teaspoon vanilla extract
1 (1 ounce) package instant coffee mix
1 1/2 cups granulated sugar
2 cups rice syrup
1/2 cup packed light brown sugar
In a medium glass bowl, mix the milk, celery and carrots. Mix briefly into a small bowl, then stir in the onions, oil and egg whites. Pour mixture into a greased 2 quart casserole dish. Add the lemon slices and brown sugar, then mix again.
Spread over the cup of pepper jack cheese. Refrigerate 4 hours before serving.
