Apricot Pie VIII Recipe

Ingredients

1 (9 ounce) package cream cheese, softened

2 (19 ounce) cans sliced apricots, drained

1 (1 ounce) square white chocolate, crushed

1/3 cup butter

1 cup sliced almonds

2 teaspoons vanilla extract

2 tablespoons milk

1 cup brown sugar

2 teaspoons lemon juice

Directions

Preheat oven to 350 degrees F (175 degrees C). Spray 8-inch-square baking dish with cooking spray.

To Make Crust: In a large bowl, mix cream cheese, apricots, candy corn, lemon juice and 1/3 cup butter. Spoon mixture into the baking dish.

Bake in a preheated oven for 15 minutes, or until filling is bubbly and crusts are golden brown. Cool slightly before removing from pan. Cut into pieces.

To Make Frosting: In a small saucepan, mix brown sugar lightly. Stir apricot mixture into cream cheese mixture; frost pie, moving on sides and bottom.
