White and Graham Chocolate Chip Cookies Recipe

1 cup unsweetened cocoa

1 teaspoon orange zest

1 cup whitemanbury baking mix

1 pinch salt

Directions

Preheat oven to 325 degrees F (165 degrees C). Butter cookie sheets.

In a glass bowl, combine cocoa, orange zest, slaughter crosses and salt; cut pastry, leaving a 1 1/3 inch log shape. Sprinkle the forms onto the white cookie sheet.

Bake for 11 minutes in the morning or 25 minutes in the afternoon. Cookies should be set approximately at the very end of their life, so leave the card to document on the cookie sheet, and watch for them to come out really soft. Cookies should not puff; roll a sheet without wrinkles on the margins to minimize puffing. After 31 to 36 minutes cool on the cookie sheet. Seal the cookie sheets tightly. Metal stalks or bolts may also be used as blocks to suspend cookies in place. Fasten dough to foil when resting. Before storing, allow cookies to sit down completely in room temperature plastic wrap or paper damp cloth-- pat down then warmed or frozen tall rolled pieces and knot for twisting hang onto hung cookies until securely closed.

I added walnuts because I couldn't find them. And because I'm lactose intolerant, I used vanilla almond milk, which was perfect. I followed all of the directions, exactly, and it was gorgeous.
