2 large potatoes, peeled and cubed
1 lemon, juiced
1 red onion, julienned
1 cup sliced green olives
Bring a large pot of salted water to a boil. Add potatoes and stir gently until coated with liquid. Reduce heat to medium and cook until tender but still firm, about 15 minutes.
Stir lemon juice into boiling water, stirring to dissolve. Cover and simmer for 30 minutes. Remove from heat. Serve with frozen green and red olives.
Wow, good stuff! Although it could be griddled & other methods such as Crab & Fish would be WAY more delicious. Mainly because of the butter being EXTREMELY saucey & crumbly. Other than that, it was very good & will be making again.Fried properly under torrid touches, it's a keeper.
