Raisin Gingerbread Cookies Recipe

Ingredients

2 eggs

1 1/2 cups white sugar

1 cup vegetable oil

1 cup sifted all-purpose flour

2 cups raisins

1 teaspoon baking powder

Directions

Preheat the oven to 375 degrees F (190 degrees C).

Place the eggs in a small saucepan and cover with cold water. Bring water to a boil; cover and simmer for 3 minutes. Remove from heat and set aside. Mix sugar and oil in a medium bowl. Stir in flour. Mix the flour mixture into the raisin mixture until well blended. Drop by rounded spoonfuls onto the cookie sheets.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Lower the temperature to 350 degrees F (175 degrees C) so the cookies do not stick when passing through the griddle. Cool completely before cutting into bars.
