Pecan Banana Fudge Recipe

Ingredients

1 cup rapidly cooking oats

1/2 cup boiling water

2 tablespoons dark rum

2 teaspoons white sugar

1/4 cup evaporated milk

1 teaspoon baking soda

1 cup semi-sweet chocolate chips

1/4 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a blender, mix together oats and boiling water. Let stand overnight. Meanwhile, in a small glass or metal mixing bowl, sift together rum, sugar, evaporated milk, baking soda and chocolate chips. Pour mixture into a 3x3 inch glass dish or mold or similar size container.

Bake in preheated oven for 30 minutes, or until toothpick inserted in center comes out clean. Cool slightly.

Was origanilly 4* but after making some changes the second time I made it, it definately turned into 5*'s+ > I sprayed the bottom + sides of 9 inch springform pan with cook spray. Pressed the crust up the sides about an inch & 1/2 (alittle thinner on the sides than the bottom.)Definatley use butter in the crust. Couldn't find French vanilla pudding so I improvised. Will try with pecans next time.
