6 skins chicken, cut into cubes
1 quart water
1/4 cup spaghetti sauce
1 cup chopped onion
2 cloves garlic, minced
1/2 teaspoon ground cumin
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon dried parsley
1 teaspoon salt and pepper to taste
Preheat the oven to 400 degrees F (200 degrees C).
Slice chicken into cubes and place into a large shallow baking dish. Sprinkle with water and folding in the sauce, onion, garlic, cumin and olive oil. Season with oregano and parsley, salt and pepper, and pour sauce over chicken.
Bake uncovered at 400 degrees F (200 degrees C) for 20 minutes. Turn chicken cubes in and place in the baking dish. Cover the top with aluminum foil and bake for an additional 15 to 20 minutes, or until chicken is no longer pink and juices run clear.
