Ingredients

1 pound lasagna noodles

1 pound sharp Cheddar cheese, cut into 1 inch cubes

1 cup ricotta cheese

Preheat oven to 450 degrees F (230 degrees C).

To Make Sauce:

In a large saucepan over medium heat, mix mascarpone cheeses, ricotta cheese and 4 ounces fresh mint leaves. Cook until cheese is melted and mixture is the white, then stir in 1 to 2 tablespoons of thickened milk and heat mixture through to boiling.
