1 (2 pound) whole chicken
4 boneless, skinless chicken thighs
1/2 cup water
1/2 tablespoon vegetable oil
1/4 cup all-purpose flour
1/2 teaspoon paprika
1/8 teaspoon garlic powder
1 tablespoon dried parsley
3 tablespoons beer
1 (4 ounce) can sliced mushrooms, drained
1 (10 ounce) can pinto beans, drained
1/2 cup diced onion
1 teaspoon sugar
1/4 teaspoon dried basil
salt and pepper to taste
Preheat the broiler.
Remove chicken from the oven and brush with water and oil. Transfer to a shallow baking dish or bowl.
In a large bowl, combine chicken, water, oil, flour, paprika, garlic powder, parsley, beer, mushrooms, pinto beans, onion, sugar, basil, salt and pepper. Mix well, and put chicken back into oven, covered.
Broil for 1 hour, turning occasionally, until chicken is no longer pink and juices run clear.
