1 teaspoon chili powder
1 teaspoon ground red pepper
1 teaspoon ground cayenne pepper
1/3 cup water
2 tablespoons oil
1/2 cup dry white wine
2 tablespoons stock
1/3 cup water
1/2 cup dry white rice
1 cup water
In a medium heat-proof bowl, combine chili powder, red pepper, cayenne pepper, water and oil. Bring to a boil, then reduce heat to medium low and let simmer for 3 to 5 minutes. Stir in wine, stock and rice. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until lentils are tender.
When lentils have cooled, remove bones and cut meat into bite-sized pieces. Stir in water to cover and simmer for another 15 to 20 minutes, or until lentils are tender.
