6 apples, sliced
1/2 medium onion, sliced
1/2 teaspoon salt
2 tablespoons apple cider vinegar
4 tablespoons apple juice
1 teaspoon cinnamon
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
Place sliced apples in a large glass bowl ; toss lightly to release juices.
Trim the apples and juice from ends so that all portions stand upright in the glass bowl; heat in large skillet over high heat. Add water, vinegar, apple juice and cinnamon to skillet; simmer until all ingredients are heated. Remove the apple slices from the skillet and let cool. Sprinkle with remaining cinnamon, nutmeg and vanilla extract.
Shape into squares; place 15 to 20 inch square dish or serving pan onto center of one portion of leftover greens.
