Crock Pot Peas: Cupcakes Recipe

Ingredients

3 cups white sugar

2 teaspoons ground cinnamon

1 cup butter

3 1/2 cups milk

3 egg yolks

1 1/3 cups cornstarch

6 large eggs

2 tablespoons vanilla extract

1/2 cup cracked cornflakes cereal

1/2 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, beat sugar, cinnamon and butter together. Stir into cornstarch and milk, stirring constantly. Mix cornstarch, eggs and vanilla to make a smooth mixture. Stir half of the batter into the bottom of a greased 9x13 inch baking pan.

Bake in the preheated oven for 30 minutes, or until golden. Dunk the pecans with a knife and then flatten slightly with a pastry blender. Remove a couple of hours before serving. Cool completely before slicing into bars.

We made a variation of this recipe and it was dynamite! Didn't have corn dogs, so we omitted the dill and added taco cheese. Definitely will make this again.
