1 medium blueberry, rinsed, drained and stems separated
1/4 cup vegetable oil
1 teaspoon salt
1 tablespoon brown sugar
1 egg
1 1/2 cups white sugar
1 teaspoon lemon juice
1 1/2 teaspoons lemon zest
1 teaspoon blueberry preserves
In a medium saucepan, combine oil, salt, brown sugar, egg, white sugar, lemon juice, lemon zest, blueberry preserves and remaining sugar. Bring the mixture to a rolling boil, stirring frequently not to remain too thick. Cover and cook 35 to 45 minutes, until fragrant.
Transfer the blueberry mixture out of heat and pour into a cooling dish and toss to coat while still warm.
