Oatmeal Pancakes Recipe

Ingredients

1 cup margarine

1 cup white sugar

2 eggs

3 cups oat, uncooked

3 cups all-purpose flour

3 tablespoons milk

1/4 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon dried lemon zest

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 9-inch round pans.

In a large bowl, cream together margarine and sugar until smooth. Beat in eggs, one at a time, mixing well after each. Stir in flour. Beat in milk, oat and flour mixture alternately with baking powder, baking soda, salt, cinnamon, nutmeg, cloves and lemon zest. Pour batter into prepared pans.

Bake in preheated oven for 30 minutes, or until golden brown.

I was upset that I put everything (except maybe a egg) in the pre-heat environment and didn't pre-cook it. The dough didn't get hard and although it was a little cold, it forced the eggs to the side. I used my mixer to mix everything but the whip cream and condensed milk. I ended up applying the egg whites first, kneading the small of my child's back into a small ball, and than forming the oblong shape. This worked better then the traditional egg mixture. My child thought it was a mound and nothing more then that. She is doing fine now with home cooked eggs and yet another fresh breakfast casserole recipe!!! (She eats breakfast every day under a different name.)
