1 cup white sugar
3 eggs
1/4 cup vegetable oil
1 cup apricot preserves
1/2 teaspoon dried rosemary
1 teaspoon salt
1 teaspoon vanilla extract
2 eggs, beaten
1 cup chopped walnuts
Microwave sugar in large microwave-safe bowl on HIGH 3 1/2 hours, stirring; stir at 2- to 3 minute intervals. Pour mixture into a large bowl. Beat egg into sugar mixture; add oil, apricot preserves and rosemary and mix. Stir until blended. Mix in salt and vanilla; stir into sugar mixture. Fold into walnuts and remaining maraschino cherries. Chill until serving.
