1 egg, beaten
1/4 cup vegetable oil
1/2 cup light brown sugar
3 tablespoons milk
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, mix eggs, oil, brown sugar and milk.
Bake in preheated oven for 8 to 10 minutes, until a toothpick inserted into center of muffin comes out clean. Cool 10 minutes before removing from pan.
