Spinach Marinade Recipe

Ingredients

1/4 cup olive oil

1/4 cup chopped onion

3 cloves garlic, minced

1/4 cup chopped fresh parsley

1 teaspoon dried thyme

1/2 teaspoon dried basil

1 teaspoon salt

1/2 teaspoon dried thyme and rosemary

1/4 teaspoon dried basil

1/4 teaspoon dried marjoram

Directions

In a small bowl, mix olive oil, onion, garlic, parsley, thyme, basil, salt, thyme, basil, marjoram and dried marjoram. Cover and refrigerate several hours to soak flavors.

Preheat a grill for medium high heat.

Place some of the onion mixture in the center of the olive oil to cover. Bring to a boil, stirring occasionally. Reduce heat to medium low and simmer for 2 minutes. Remove from heat and stir in the parsley, thyme, basil, salt, thyme and basil.

Coming off of a while back on another review's excitement, I was very much taken with this recipe. After reading the recipe, I decided to make perhaps my *best *mix*, using only ground beef and chicken broth. This might be due in part to using chicken broth as opposed to broth from a spicewood. I'll be making this again--a hearty, satisfying, versatile main dish!
