2 cups cooked, chopped roasted cauliflower
1 large tomato - diced
6 ounces shredded cooked crabmeat
2 jalapeno peppers, seeded and minced
1 (8 ounce) package cream cheese, softened
2 tablespoons mayonnaise
2 tablespoons brown sugar
2 cups shredded cream cheese
2 tablespoons lime juice
1 cup sliced pecans
1 (4 ounce) jar marshmallow creme
In a saucepan, heat 1 teaspoon of olive oil, and saute cauliflower until soft. Stir in tomato and crabmeat. Cover heat, and stir to coat, about 20 minutes. Sprinkle with jalapeno peppers.
Mix together cream cheese and mayonnaise, mixing thoroughly. Whisk together the oil, green onions, celery, lemon juice, pecans, and marshmallow creme. Beat the cream cheese mixture into the cauliflower mixture.
Heat oven to 350 degrees F (175 degrees C).
Spread cauliflower mixture into a medium baking dish. Cover with foil, and bake in preheated oven for 3 to 4 minutes or until heated through.
