2 tablespoons vegetable oil
2 tablespoons white vinegar
1 clove garlic, minced
1 tablespoon chopped fresh parsley
3 tablespoons paprika
1 tablespoon dried minced onion
1/4 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon salt and pepper to taste
1 (4 ounce) can chicken broth
1 pound chicken thighs, diced
1 small onion, diced
Preheat oven to 350 degrees F (175 degrees C).
Mix 3 tablespoons oil, vinegar, garlic, and parsley in a large bowl. Stir in paprika, onion, oregano, basil, salt and pepper. Mix thoroughly. Stuff breasts with mixture.
Place breasts in a 9x13 inch baking dish and bake in preheated oven for 30 minutes, or until breast is golden brown. Spoon sauce over breasts.
Press remaining mixture into breast cavity and squeeze lemon juice over breasts. Cover, and bake for 10 minutes, or until juices run clear.
