Pickled Sweet Potatoes Recipe

Ingredients

1 cup water

2 tablespoons lemon juice

1 tablespoon orange juice

1 teaspoon lemon zest

1 teaspoon garlic powder

1/4 teaspoon salt

Directions

In a large bowl, combine water, lemon juice, orange juice, lemon zest, garlic powder and salt. Mix gently. Cover and refrigerate for two days, or until tender.

Preheat oven to 375 degrees F (190 degrees C).

Bake pickles in preheated oven until the peel is soft, about 8 minutes. Melt butter or margarine in a medium saucepan over medium heat. Stir in the vinegar and sugar until all of the sugar dissolves. Stir in the lemon juice, orange juice, lemon zest, garlic powder and salt.

Place pickles in a shallow baking dish. Bake the pickles 5 minutes in the preheated oven. Remove from oven and reheat with vegetables.
