Skillet Beef and Peas Soup Recipe

Ingredients

2 cups cooked beef

1 cup cooked pepper potatoes

1/2 cup rice (optional)

1/4 cup chopped onion

2 tablespoons tomato paste

1 teaspoon garlic powder

2 teaspoons salt

4 cups chicken broth

1 cup water

1 cup onions, grated

2 cups water

1 (28 ounce) can tomato paste with salt

1 (5 ounce) can mushrooms, drained

1 (12.5 ounce) can sliced mushrooms with juice

6 linguine packets

10 large tomatoes, chopped

Directions

In a large saucepan, combine the beef, pepper, potatoes, onion, tomato paste, garlic powder, salt and broth. Bring to a boil. Stirring constantly, cook until beef is browned. Reduce heat to medium and simmer for about 30 minutes. Add the chicken broth, water, onions, and water to the skillet. Reduce heat to low and simmer for about 7 minutes.

Mix the linguine packets in a large bowl, scraping the sides of the packets with a metal spoon. Pour in broth mixture, reserving 2 tablespoons of the liquid; add water and onions; mix well.

Stir in tomatoes. Cover, and simmer for about 3 to 5 minutes, stirring occasionally. Cover, and cook for about an additional 5 minutes, stirring occasionally.
